black bean cookies


Ingredients
  • 1 can no-salt-added black beans, rinsed well
  • 2 Tbsp. milk
  • 2 Tbsp. peanut butter/nut butter of choice
  • 2 Tbsp. coconut oil or oil of your choice
  • 3 Tbsp. flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup sugar
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1/2 tsp of cinnamon
  • pinch of salt
  • 1/2 cup dark chocolate chips, plus more for sprinkling on top

preheat oven to 375
place beans, milk, peanut butter oil and vanilla  into your food processor blend until smooth
in small bowl mix flour, cocoa powder, baking powder cinnamon sugar and salt, add to wet ingredients and mix until whipped and fluffy
fold in chocolate chips.
spoon onto lined baking sheet and sprinkle extra chips on top 
bake for 10 mins.

banana bread in a cup

Ingredients
  • 4 1/2 tablespoons  all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 banana smooshed
  • 3 tablespoons  sugar
  • 1 1/2 tablespoons apple sauce
  • 1/2 tablespoon vegetable oil
  • 1/4 teaspoon pure vanilla extract
in a small bowl mix: banana, apple sauce, vanilla,  oil and sugar. (set aside)
in a microwave safe mug mix: flour, cinnamon, baking powder, soda and salt
combine wet and dry ingredients in mug. stir until smooth.
microwave at 50% power for 3 minutes... and enjoy.
